Kerio Valley, Kenya 

In the semi arid lands of Kerio Valley, we are fortunate in that maize is grown 1 hour away in the higher lands of Iten. So, combined with the beans we grow on the school grounds of Songeto, the maize adds to this to form a local dish called ‘ Githeri ‘ . Nutritious and delicious ! 

Turkana, Kenya 

Not so straight forward is the arid lands of Turkana, where rainfall is very rare. Here, our dish consists of a straight forward rice and beans, purchased from the markets of Lodwar. A pinch of salt, and this is still an excellent meal for the children.
